Oh, the joy of pick 'n' mix. Well, it's back. Kind of. And this time, it won't cost you any teeth. Claire Lettice has just launched muddycook.co.uk, where you can make your very own bespoke muesli. It's simple, you start with a base (there are 10 to choose from), then add organic, preservative-free cereals, dried fruit, nuts and seeds and other tasty stuff(coconut chocolate clusters and more) until you've created your dream breakfast cereal. make time for... Muddy Cook
There are some ideas that are so simple and so obvious that one wonders why no-one has done it before.
When Paul McCartney first came up with the tune for the Beatles classic, Yesterday, for instance, it seemed so familiar to him that he initially believed he was humming a song that already existed. And Muddy Cook is just such an idea – a website that allows you to create your own perfect mix of muesli. We muesli lovers are a fussy bunch – for instance, I'm normally a Southern Alps No.1 girl, but it is often hard to track down and No.2 nor No.3 just don't float my breakfast boat in the same way.
Which is where Muddy Cook comes in. You choose your own base from a selection of 10 – from Just Oats for the purist to Tahiti Gluten Free for the more exotic tastebuds. And then you add your own extras – grains, cereals, fruits, nuts, berries, seeds and other (mainly organic) goodies - until you have a mix that is perfectly tailored to your taste. If you're not feeling creative or don't trust your judgement, there are a number of recipe suggestions with names like The Child Within, Lo-Gee-Eye, Persian Green and Chocolate Box. Or you could try Mandy's Mix - The Alps base with macadamia nuts, sun-dried banana, mango pieces and green raisins.
It's as simple and easy as that – and a couple of days later 750g of muesli arrives in a personalised bag at your front door.

Hate raisins but love nuts? Then the online muesli maker is for you – you can create a mix you’ll always enjoy.
Who’s behind this idea and what is it exactly?
Claire Lettice launched the idea in the form of a company named Muddy
Cook. Muesli lovers can go online and make their perfect mix from more than 85 organic ingredients, which are also preservative- and additive-free. Customers can even name their mix and have it printed on the pack. Claire says: “Muddy Cook came about because of my love of muesli and my dislike of raisins. Most off-the-shelf mueslis are packed with them – so I began thinking that if I didn’t like a particular ingredient then there might be others that felt the same way about other ingredients, like apricots or dates or Brazil nuts”. Do others agree? This view was supported by commissioned research, which indicated that around 75% of muesli eaters are, at some stage, disappointed by ingredients in their muesli. The ‘love this, hate that’ consumer is Muddy Cook’s target market. Claire adds: “Now everyone can re-mix their favourite off-the-shelf muesli selecting only the ingredients they really like.” The research also showed that within the premium muesli market, quality ingredients and interesting mixes are key factors.
Where do the ingredients come from?
Claire tried many different suppliers for each of the individual ingredients before settling on those now available on the website.
“Finding a UK supplier who could provide slowly-dried UK grown organic apples and pears proved difficult, so we took the decision to buy fruit direct from the orchard growers and slowly-dry them ourselves. Not only is it our intention that each and every ingredient should taste great and be good for you, but they should also be kind to the planet, so almost all of our ingredients are organic. However, with over 95 ingredients, there are still a few that aren’t yet organic.” Muddy Cook has a strict ethical buying policy too. “Wherever we’ve had the option of buying Fair Trade we’ve chosen it – sometimes at a slightly higher cost - but we believe it’s the right decision,” says Claire. Muddy Cook is also intending to source as many grains as possible from the UK. The company’s ethical policy carries through to the paper for packs and card for postal cartons, both are made from recycled materials and are fully recyclable.
Is this healthier for me?
The nutritional benefits of the relatively unprocessed ingredients are one of the aspects that Claire loves about the product she’s making. The website contains comprehensive nutritional information for every ingredient and a nutritional glossary as well as the provenance of all the ingredients. The site offers many of today’s so-called ‘superfoods’, such as quinoa, oats, walnuts, almonds, pumpkin seeds, cacoa nibs, blueberries, goji berries, cranberries and cherries. These ingredients have a favourable combination of nutrient richness, antioxidant strength and health benefits.

There's not a day goes by without a small avalanche of press releases landing on my desk informing me of various happenings on the food front. But it's not every day that one of them stops me in my tracks because I think it's such a brilliant idea!

As a local food writer, home-grown stories are my first priority. However, I came across such a gem this week that I had to share it with you. Start-up company Muddy Cook - which is based in London - has just launched the ultimate in product customisation for all those muesli lovers who can't find the perfect mix. Simply go on-line and mix your own muesli from a cornucopia of nearly 100 ingredients (many of them organic). You can even decide the name of the mix and have it printed on the pack.
Muddy Cook came about because founding director Claire Lettice loves muesli but hates raisins - and she's not on her own, which is why the love this, hate that' consumer is Muddy Cooks' target market. "Now everyone can re-mix their favourite off-the-shelf muesli selecting only the ingredients that they like," said Claire, who tried many different suppliers for each of the ingredients. The company has decided to slow-dry its own organic apples and pears, for example, after having sourced the fruit direct from the orchards; Muddy Cook is also trying to source as many grains as possible from the UK. You can tell a lot about people from what they eat for breakfast, but there's two basic types:
One goes for the tried and tested strong black coffee and one cigarette option.
The other goes for the high-fibre, nutritionally balanced, GP-approved healthy option.
When I was young I was the former. As I get older, I've become more and more inclined to be the latter, and that's why this site has grabbed my attention.
Shop-bought muesli is often about as appetising as the scrapings from a gerbil's cage, but with Muddy Cook you can design your own from
dozens of healthy ingredients. Prices depend on what you throw into your mix and it does come out a bit pricier than supermarket stuff, but this is quality food that your insides will thank you for.

Per me che la mattina non digerisco i biscotti, né posso permettermi un golosissimo croissant altrimenti sto male per le successive 3 ore - durante la giornata invece mangio di tutto -  l’alternativa al salto della colazione sono le barrette, le gallette di riso, ma soprattutto, i cereali in scatola. Peccato che il più delle volte i frutti rossi siano 10 gr su 400gr o che alcuni gusti risultino un po’ troppo stucchevoli.
Per soddisfare le peculiari esigenze di ognuno di noi, si può far affidamento a Muddy Cook, sito inglese da cui potete ordinare il vostro mix di muesli preferito. Basta scegliere la base e aggiungere tutti gli ingredienti che volete. Frutta disidratata (pere, mele, uva sultanina, fichi, datteri, albicocche, mango), frutti di bosco (more, mirtilli, fragoline, lamponi, ciliege), una gran varietà di noci, semi, albicocche ricoperte di cioccolato, banana chips, gocce di cioccolato, gummy bears (sì, le caramelle!) e vari tipi di zucchero aromatico (cioccolato, cannella, cocco, zenzero, vaniglia).
Ma non finisce qui, perchè una volta completata la vostra ricetta, potrete anche decidere di apporre il nome del vostro mix sopra la confezione, così da ricevere quasi un kg di muesli ultra personalizzato.
